3 tablespoons extra virgin olive oil
2 tablespoons white balsamic
1 teaspoon Dijon mustard
2 tablespoons honey
1/4 cup chives chopped on a diagonal
Salt & pepper
Slice tomatoes and arrange on a platter.
In a food processor, combine the olive oil, white balsamic vinegar, dijon mustard, honey, salt and pepper and process to combine.
When ready to serve, dress the tomatoes with desired amount of dressing, and top with the chives.
Even with the best ingredients, variety is everything, and not just to people with restricted diets. There is nothing better than fresh tomatoes at the end of summer, but I've had more than my share of tomato basil/balsamic at this point in the season. This was such a nice and equally foolproof and simple change!
