I am back in the game! After a long hiatus due to work being insane, a few big trips, and getting engaged (!!!!) and planning a wedding in 9 months, I have barely had a single moment to dedicate to recipe making, and any spare moment I HAVE had, has gone to scheduled peace and quiet (drinking wine on my couch in my largest sweatpants). It was also a product of the winter... when it is pitch black at 5:15, 6 pm seems way too late to start cooking, taking pictures, and writing everything down. Now that I have light until 9, 6 pm seems like late afternoon and I have nothing but time. So here we go! This recipe was a result of the things I already had in my fridge, which I think is the type of recipe you can't have enough of. Maybe its just me, but tomatoes of any kind and chicken are staples on my grocery list, and with just a few other items, I had a wonderful dinner (and lunch the next day).
