A delicious fall salad - stunning for company or a party, and a unique and special upgrade for yourself for lunches and sides for the week! The colors in this salad are incredible, and everything is so fresh and just perfect for right now. The real star of this salad is the apple cider vinaigrette, which is the perfect mix of sweet and decadent ... especially if you serve the dressing and the roasted squash slightly warm ... just food for thought (read: serve the squash and dressing warm). I am loving fall food, and fall in general right now. Right now in DC we are in the midst of those perfect 3 weeks were the leaves are gorgeous, and it is still in the high 60's every day. Fall outfits were made for this weather! And I think what I love the most about the food, is that my lunches (aka my leftovers), are hot lunches. So much more satisfying. This acorn squash is the perfect, simple, fall side dish. It is so flavorful, and frankly, it is addicting. I am restricting myself to only making this when I have other people to share it with, otherwise it will all literally disappear before I even know what happened. But, while they are in abundance, make this as much as you can. Initially I tried this recipe with olive oil instead of butter, and the butter really makes a huge difference (obviously). Healthy fats! Its worth it, trust me. Hope you enjoy, and happy fall! This cocktail is the perfect mix of refreshing and sweet. In my opinion, there is nothing worse than an overly heavy or sweet cocktail. I love the bit of fizz from the cider, the bite from the rum, and on a fall Sunday of a three day weekend, this could not be more perfect. And it's extremely simple. The last thing I want to ever do is slave over the most relaxing part of the night ... Cocktail hour! Make one of these at least one time this October. This is the perfect meal for a fall Sunday. Yesterday was the first day in DC that was a little chilly! I had been saving this recipe to make "this fall", but still thought I had at least a month until I would be ready to accept that it is, in fact, here. Denial! So, I put my feelings about summer being over aside, and gave it a shot. It made my apartment smell incredible, and it is a pretty no-fail recipe. The Chorizo seasons the entire dish from start to finish, so after you have done the chopping phase of the recipe, there is just a nice hour of stirring, wine-sipping, and general coziness. YUM. |
