I am so glad I stuck to my guns, and instead of having a million things to serve and hoping I would be fine, I picked one easy, delicious, healthy and beautiful appetizer. It was easy to throw together, four simple ingredients, and let us all snack all night and still feel great.
Ingredients: Fresh ripe pears Proscuitto Arugula Good quality local honey Fresh lemon jucie | This recipe is very "use your best judgement" based, but here is what I did: I placed a full handful of arugula into a bowl, and tossed it with a half a lemon's worth of lemon juice. Cut two pears into 24 pieces (6 slices per half, this was the perfect bite size!). Assemble four to five arugula leaves on top of each pear slice, and wrap with a half of a slice of prosciutto, lengthwise. Once arranged on your platter, and just before serving, drizzle with honey. |
