2 ripe mango, diced
2 ripe avocado, diced
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, minced
1/4 teaspoon red pepper flakes
Juice of 1 lime
Pinch of kosher salt
Chop and combine all of the ingredients, and serve immediately.
If you are making this ahead of time, I like to combine everything but the avocado and cilantro. The rest of the ingredients can meld together, then simply add the diced avocado and cilantro, and give it a quick toss right before serving!
This was a leftover recipe from Cinco de Mayo that was a hit and definitely one that I want to save for the summer and all of the Cinco de Mayo's to come. I also think that this would be to die for over a simple grilled salmon or sea bass! Can't wait to try that, too. Yum! I hope you enjoy.
