Serves 2 Ingredients: 12 ounces hard apple cider (I prefer Jacks or any other original, unflavored hard cider) 1/4 cup light brown rum (10 cane is my favorite) Juice of 1 lemon Honey Simple Syrup 1/8 cup honey 1/2 cup water | In a small pot over medium heat, whisk the honey and water until combined. Remove from the heat and chill. Thinly slice a honeycrisp apple. For two cocktails, 1/4 of the apple will do. Combine the hard cider, rum, lemon juice, and 1/4 cup of the simple syrup. Pour into glasses, garnish with the sliced apple, and enjoy! |
This cocktail is the perfect mix of refreshing and sweet. In my opinion, there is nothing worse than an overly heavy or sweet cocktail. I love the bit of fizz from the cider, the bite from the rum, and on a fall Sunday of a three day weekend, this could not be more perfect. And it's extremely simple. The last thing I want to ever do is slave over the most relaxing part of the night ... Cocktail hour! Make one of these at least one time this October.
