Serves 4 Ingredients: 4 6-ounce filets of salmon 2 lemons, halved 1/2 cup olive oil, plus two tablespoons 2 tablespoons chopped parsley 2 tablespoons chopped chives salt & freshly ground pepper | Drizzle the two tablespoons of olive oil over the salmon, and over medium heat, grill for approximately 4 minutes on each side, until cooked. This works just as well in a grill pan on the stove as it does an actual grill! Don't forget to grill the lemons at the same time. Simply place them flesh side down until charred and caramelized. In a bowl, combine the olive oil, chopped parsley, and chopped chives. Once the lemons are grilled, squeeze their juice into the mixture, and combine. Simply pour the grilled lemon vinaigrette over the grilled salmon, and serve immediately. |
This is the first weekend in a long time I have felt like I am starting the week refreshed. It has been full of good food, beautiful weather, good sleeps, and lots of relaxing with friends. I have grocery shopped, put my toys away, done my laundry, and even put away my laundry. Now I am capping it off with this perfect dinner. Especially with Braised Leeks, it is a meal that you just feel great about. It is a non-complicated, quick, flavorful, easy cleanup dinner that is delicious and such a treat.
