I have this great market a few blocks from my apartment that I absolutely love for a few reasons. The first is that they seriously promote drinking while shopping. You actually have to walk through/past the bar with so many different beers and wines on tap to even get to the grocery section - and when there it is staring you in the face, and everyone else is enjoying a nice bev, why the heck not take a moment and 'wine down'. Seems like the obvious choice!
Once the lifestyle adjustments become more routine, and as soon as you start feeling better regularly, having an allergy or an intolerance becomes very liveable. The biggest challenge that have been facing recently is the bummer of not always getting to partake in different things with those around you. I definitely make a point to make better choices in restaurants or meals with others whenever I can (going out for pizza is just setting up for failure), but there are some things that I couldn't convince my family or friends to give up out of solidarity for anything in the world.
In these instances, when I am left to make a meal that is completely different from everyone else, I've found there is nothing more frustrating than having whatever I'm making not be ready yet, and suddenly I am eating something not only different, but then I am also eating by myself. Sad.
I started making this salmon up at the beach this summer, and ended up making it every single day for lunch while the others had their lobster rolls. It was quick, easy, and pretty delicious. No marinating, no chopping, no worry about cross-contaminated utensils, no fuss. This could be fridge to plate in under 20 minutes, which is conveniently the time it takes to order and pick up lobster rolls!
Yummm its zucchini and summer squash season! This is my absolute favorite way to cook zucchini and summer squash. It packs so much flavor. Cooking in parchment is also so fun to do for a small group of people, and perfect for dinners for one. Get ready for a lot of parchment meals in the next coming months - it is one of my summertime favorites.
On this particular morning especially, I am thrilled that I not only made this frittata to feed me lunches for the week, but that I also packed my lunch last night. See, I was the victim of a false fire alarm situation (in the rain), and this morning my 9 am meeting with a new client was not giving me the normal flexibility to go in to the office late. All kidding aside, I was out of my bed, and out the door in 2 minutes flat. If that. I am actually really impressed with myself. I think I managed to look somewhat normal, too.
SO, originally I was going to write about how perfectly awesome this would be for company, but even more how perfect a frittata was for a busy weeks lunches and dinners ... and well, look at me testing my own theories. But really, it is. And this recipe in particular is incredible. Especially if you like things with a little heat, and a little savory - you will really enjoy this.
This weekend it is pouring rain, although I doubt any of us mind that much considering it is 60 degrees, and last weekend it was snowing. Again. Even still, it is so grey, and being stuck inside all day was just making me crave something bright, fresh, and really flavorful. I have more citrus than I know what to do with, and oranges are so wonderful right now, that this salad was perfect.
In the fall and spring, I love an easy soup that is just as good at room temp as it is just made. This soup is perfect for lunches, and even to serve at a brunch. It is a little bit sweet, and a little bit spicy.
I am soaking up every last second with brussels sprouts this winter. Since we are currently buried under snow - its brussels sprouts night!
This salad is so quick and easy to throw together, and delicious any season or time of year - as long as you can find a ripe avocado! After that, take 5 minutes and you have a killer salad for yourself, or a group.
This dish is so satisfying, and delicious, and fresh tasting, and yes, I am talking about broccoli. You actually feel like you are eating something bad for you it is so satisfying. Mmmm.
I had so many big plans for Oscars themed appetizers, and then my day got busy and I found myself with two hours of time to go, in which I also needed to shower and vacuum. Sundays!
