Sometimes, you find yourself on a Monday afternoon, and you need baked goods for dinner. It could be worse, I could have actively chosen to NOT include vegetables! One of my best friends, Emily, is a baking queen, and has made zucchini bread in every which way. From mini loafs, to muffins, and every other way to bake, they are always incredible. To me, they are the perfect afternoon snack or side to dinner, because they aren't quite as sweet as the other loaf varieties out there. Plus, pumpkin bread is to fall, like zucchini bread is to spring... so here we go!

I really love a jalapeno margarita, but I probably never would have made one had I not bought way too many grapefruits than I knew what to do with. I love grapefruit, but really only when combined with other things. I think I am always looking for them to be as sweet as an orange, and am always disappointed. But on a rainy saturday, with nothing but time, and just happening to also have jalapenos... this did the trick! This weekend it is pouring rain, although I doubt any of us mind that much considering it is 60 degrees, and last weekend it was snowing. Again. Even still, it is so grey, and being stuck inside all day was just making me crave something bright, fresh, and really flavorful. I have more citrus than I know what to do with, and oranges are so wonderful right now, that this salad was perfect. I have always loved chinese takeout. It is the perfect cozy, comforting, and indulgent food and I can't imagine life without it. So - I took a stab at a vinaigrette that would hopefully be similar to my all time favorite chinese food dish: chicken and broccoli. I loved it! It was a more sophisticated and fresh version, that I could see enjoying with a whole chinese food meal, but also as a side for a number of other things. Finally! Ice cream success! This recipe is so decadent, light and fresh, flavorful, and just perfect in every way. There really is not much else to say about it. Knowing this is in my freezer as I type is getting me through the Monday blues.
In the fall and spring, I love an easy soup that is just as good at room temp as it is just made. This soup is perfect for lunches, and even to serve at a brunch. It is a little bit sweet, and a little bit spicy. When you're allergic to wheat, and you want crackers, you've got to make crackers. Although, I think this is something fun that everyone can do to make a cheese plate or appetizer more special. Ina does it!! So clearly I am, too! I am soaking up every last second with brussels sprouts this winter. Since we are currently buried under snow - its brussels sprouts night! This salad is so quick and easy to throw together, and delicious any season or time of year - as long as you can find a ripe avocado! After that, take 5 minutes and you have a killer salad for yourself, or a group. |
