Serves 4-6 Ingredients: 2 delicata squash 1 acorn squash 3 teaspoons kosher salt 1.5 teaspoons black pepper 1/3 cup olive oil 1/3 cup good quality maple syrup 3 tablespoons fresh thyme, chopped | Preheat your oven to 425 degrees, and line a baking sheet with heavy duty aluminum foil. Slice your delicata squash into 1/4" rings, and use a spoon or knife to remove the seeds in the middle. Next, slice the acorn squash into rings as close to the same size as you can manage, and then quarter them. Spread onto the lined baking sheet. In a bowl, combine the olive oil, salt, pepper, maple syrup, and thyme. Pour over the squash, and toss to combine. Place in the oven and roast for 30 minutes, tossing once after 15 minutes. Let cool slightly, top with fresh chopped thyme, and enjoy! |
This recipe features my two favorite squash - delicata and acorn - and my favorite simple, flavorful, and delicious way to eat them! I've made every combination between rosemary, sage, thyme, brown sugar, honey, maple syrup... you name it, but this maple syrup and thyme version is my favorite! This comes together quickly, and you can really use any combination of squash with this topping! It is easy, healthy, and we haven't gotten sick of it yet!
