12 ounces hard apple cider (I prefer Jacks or any other original, unflavored hard cider)
1/4 cup light brown rum (10 cane is my favorite)
Juice of 1 lemon
Honey Simple Syrup
1/8 cup honey
1/2 cup water
In a small pot over medium heat, whisk the honey and water until combined. Remove from the heat and chill.
Thinly slice a honeycrisp apple. For two cocktails, 1/4 of the apple will do.
Combine the hard cider, rum, lemon juice, and 1/4 cup of the simple syrup. Pour into glasses, garnish with the sliced apple, and enjoy!
This cocktail is the perfect mix of refreshing and sweet. In my opinion, there is nothing worse than an overly heavy or sweet cocktail. I love the bit of fizz from the cider, the bite from the rum, and on a fall Sunday of a three day weekend, this could not be more perfect. And it's extremely simple. The last thing I want to ever do is slave over the most relaxing part of the night ... Cocktail hour! Make one of these at least one time this October.
